Vin Santo
The
wine is obtained from Malvasia and Trebbiano del Chianti grapes,
dried for several months on the “cannicci” (reed mat),
then hand pressed. The few must obtained is aged in the “caratelli”
(small barriques), which, once sealed, stay up to seven years in
the old “vinsantaia” room of our estate. The vin santo
has a brilliant amber colour. The bouquet is reminiscent of flowers
and dried fruit. The palate presents an excellent balance between
acidity and residual sugar components. Normally accompanies desserts
and ripe cheeses.
